“I would say I am familiar with it so I get the job, and then I would figure it out once I started.”
Claiming familiarity you do not have is dishonest and easy to expose with one follow-up question, which can end the interview and would destroy trust on the job. It answers a question about handling gaps by proposing to lie about them.

Why not just say you know it to get the offer?
It usually unravels in the next question or on the job, and it destroys trust, which is far more damaging than admitting a gap. Interviewers expect gaps from grads, what they cannot work with is dishonesty.
How do you make a gap sound small?
Map it to something you already know (most tools are variations on familiar concepts), lay out a concrete plan to learn it, and cite a time you closed a similar gap. That reframes it from "I cannot do this" to "I do not know it yet, and here is how I will".

If you genuinely do not know
Say this instead of freezing. Reasoning out loud from what you do know beats silence every single time, and a good interviewer is listening for exactly that.
“I would [be upfront I have not used it, because faking falls apart and I want you to trust me]. Then [show the plan: read the docs, build something small, map it to a concept I already know]. I have [done exactly this before, e.g. learned containers/cloud from zero]. So: [I do not know it today, here is how I would quickly, and I have a track record of doing it].”
